Ven Pongal



Ingredients
1 1/2 cups medium grain rice
1/2 cup yellow mung beans
1 teaspoon salt or as per taste



For Seasoning
1/2 teaspoon cumin seeds
1/2 teaspoon black peppercorns, crushed
1 teaspoon ginger root, chopped
2 green chilies, cut lengthwise
4 curry leaves
3 tablespoons oil or clarified butter (Ghee)

For Garnish
4-6 cashew nuts fried in clarified butter

Method


Wash rice and yellow mung beans and drain.
Cook in 5 cups of water until very soft. Remove from heat and add salt and mix well.
Heat oil or ghee in a pan and add the cumin seeds, crushed black peppercorns, ginger, green chilies and curry leaves. When the cumin seeds crackle and are brown, add the mixture to the Ven Pongal an dmix well. Garnish with fried cashew nuts. Serve hot with Chutney or Gojsu.
